Bazaar, Paname, Mamacita, Urban… Who is behind your favorite Luxembourgish restaurants? Gabriel Boissanté, founder & manager of the restaurant group Mama Boys, reveals his sources of inspiration and shares how he manages to juggle his passion with family life.

Hello, my name is Gabriel Boissanté, I am 46 years old, and I am the founder and manager of the Mama Boys group, a restaurant group in Luxembourg.
Tell us about your first phone.
My first phone was a brick with an antenna that stuck out. It was a Bordeaux brick-colored Alcatel from 1997. It was a time when most people today weren't even born yet.
Are you more of an Android or Apple person?
I don't have much loyalty to either team. I started with Apple, then I switched to Android, and recently, I've gone back to Apple. But I miss Android.
What is your favorite app?
It's very simple: Spotify. Music accompanies me everywhere. Music apps with subscriptions allow you to discover a lot of artists. When you have a busy life, it's hard to be without music.
You wear many hats; which app helps you organize?
The Microsoft app, "To Do." I receive a list sent to me almost every day with my to-do list, and every day, I notice that I haven't always finished it.
What is your favorite part of developing a new project?
It's a bit like having a child. All phases are incredible, but there is a particular excitement in building the elements that give a project its soul. We always try to put a piece of ourselves into it. It's a moment of intense creativity just before the opening.
Can you tell us where the inspiration for Bazar Paname Cantine comes from?
The inspiration comes from a gastronomic appetite and the desire to share atmospheres and experiences. With my partners, we wanted to create places that would feel at home in Luxembourg as well as in other major European cities. The requirement is to offer something more.
What would be the secret ingredient for a successful cocktail?
Balance. A cocktail tells a story and must be well-balanced between sweetness, smokiness, strength, and softness.
What is the origin of the name "Twisted Cat" for your beer?
The name comes from one of my partners, Tom, who is passionate about beer. He and his wife have a cat, and they made the beer together. "Twisted" refers to the slightly mischievous personality of the cat and the effect that beer can have.
You do stand-up in your spare time; when will you open a Comedy Club?
I have performed on stage and done improvisation. I don't know when I will open a Comedy Club, but I would be happy to host stand-up initiatives in our establishments.
Any other projects in mind, an exclusive to share?
This year is the first time in 13 years that we don't have a planned opening. But it's starting to itch a bit, so maybe in 2025, it will be different.
